4 x 300g Mata de Plátano Collective, Honduras
Variety: Lempira, IHCAFE 90, Catuai, Parainema
Country: El Paraiso region, Honduras.
The Mata de Platano blend is the product of over 200 small-scale producers situated primarily in the Moroceli municipality of El Paraiso, Honduras.
United by a full-farm philosophy, 200 small-scale local producers work towards a mutual goal with collective resources (such as a de-pulper, solar dryers or mills between 3-4 neighbors, or one community truck delivering harvests.) Knowledge, too, is shared — for instance, new disease-resistant cultivars are implemented or methods to better minimize humidity, all help to ensure consistent top quality coffee.
Bordering on Honduras’ south-eastern border with Nicaragua, El Paraiso contains one of the country’s warmer coffee growing micro-climates. With higher farm altitudes of 1050-1750 meters above sea-level, the result is a slower matured, high-quality bean with well-developed caramels.
Head of Roastings' Tasting Notes: Clove, Orange, Caramel. Almond and delicate floral aromas, with bright citrus acidity.
